Baked Brie in Puff Pastry with Raspberry Preserves

I could live on appetizers and desserts. Well, I wish I could live on appetizers and desserts. What is more fun – more delicious – than eating fun food with a glass of wine or cold beverage and then topping it off with a sweet treat? We aren’t able to do this as much as we’d like. . .  this-gotta-eat-healthy and nobody-wants-to-be-fluffy nonsense has ruined that. Or maybe it’s the turning-60-and-can’t-get-away-with-it that has taken some of the fun away. Regardless, there are STILL a lot of times when we want a fun appetizer. And not all of them are bad for us! This is one that we love! Serve it with apples instead of bread and it’s heading toward that healthy train! Oh – and it’s SO easy to make! And did I mention that this baked brie appetizer in puff pastry with raspberry preserves topped with toasted almonds  goes perfectly with wine?!?

1 sheet – frozen puff pastry, thawed

1 (8 ounce) round brie cheese

1/8 cup toasted sliced almonds

1/4 cups preserves  (I like raspberry – but  you can use whatever preserves you happen to have)

Preheat oven to 425.

Lightly grease cookie sheet – or use freezer paper on top of a cookie sheet (foil works too).

Roll puff pastry out slightly.

Place cheese wheel on top of pastry.  (I like to scrape off the rind off on the top and sides of the wheel with a table knife.)

Place preserves on top of cheese and then place almonds on top of preserves.

Wrap Puff Pastry up and around the cheese wheel.

Bake for 20-25 minutes or until pastry is lightly brown.

Let cool for five minutes and serve with a baguette and apples.

So, so delicious!  Enjoy your appetizer and your wine!
