The Original – Birthday – Key Lime Pie

My husband and middle son recently informed me that they liked the “old key lime pie” better than the one I’ve made recently  (and that I included on a blog – https://www.tropicallifefoodandfun.com/key-lime-pie-a-sliver-or-a-slice/.  Since we always have a key lime pie for my husband’s birthday celebration, I made one today.  It’s the same basic recipe that every key lime juice bottle lists, with one addition. Oh – and it’s better with fresh-squeezes key lime juice!

Here’s the recipe:

9″ baked pie crust, or graham cracker pie shell ( shortbread is good, too!) 

14 ounce can sweetened condensed milk

3 egg yolks (save the egg whites!)

1/2 cup key lime juice

Combine milk, egg yolks and lime juice.  Blend until smooth.

Then beat the egg whites until stiff and fold into mixture. (This is the addition that adds nice fluffiness and texture).

Pour mixture into pie shell.

Top with meringue – 4 egg whites, with 1/2 teaspoon cream of tartar – gradually adding 4 tablespoons powdered sugar until stiff peaks form.Place meringue on top of key lime filling and bake 15 minutes at 350 degrees, or meringue is golden.  

It’s delicious and the perfect dessert!  And, Happy Birthday to my husband!
